When we think Spanish food we usually associate it with lots of tapas and paella but Nexo is a Spanish restaurant specializing in Iberico pork. And don’t we love pork!! Who doesn’t? Iberico pork is the next new black pig on the block in Malaysia! These Iberico pork are acorn-fed and they have fats so soft that it melts right in your mouth. For many pork lovers it’s as good as it gets.
So we started with the Iberico pork belly. It was tender, juicy and slightly salted. it blended well with the mustard sauce to cut away the fattiness and the pickled onions marinated with beer. What can possibly go wrong with that?
We then moved on to the Iberico jowl. The jowl is the meat from the pig’s cheek. The cheeks is relatively lean, slightly chewy yet moist. Usually you would need some fat to get some tenderness but the cheek is like lean meat. Nexo’s Iberico jowl is prepared very simply for just that reason – to leave the favours to do cast their magic on you. The jowls are pan seared and dressed with balsamic reduction to give a bit of enhancement. Slightly chewy but with all the flavours you hope for in each mouthful.
We had the chance to have their Iberico burger and it translated into one of the best burgers in Kuala Lumpur. Every single ingredient in that burger has a touch of it’s own and is bursting with flavours. Even the burger bun was good enough to eat it on its own – it’s homemade brioche by the way. It’s buttery and lightly toasted what ensures a tender crunch. Take note though that there are only a limited amount of brioche made in a day so you have to be there early!
