The dish you’re looking for at Restaurant Super Kitchen is called “Pan Mee”, the dried version. Pan mee actually means flat flour noodle. The best are freshly hand-pulled, where the dough is traditionally hand kneaded and torn into small pieces. Nowadays the dough is kneaded using machine and is shaped into long strip of noodles (like spaghetti).
The Pan Mee is served with marinated minced pork, perfectly poached eggs, crispy anchovies, fried shallots and served separately is the lethal fried chilli flakes. Mix everything together but go easy on the chili flakes. Served together is a bowl of soup with sweet potato leaf.
I usually mix about 2 spoonful of soup into the noodles to add more texture. A good choice of appetizer is the homemade deep fried dumpling (Sui Kow) wrapped with wonton skin filled with minced meat and carrot.
