The past few years have been good to London’s ramen lovers. What started out as a small drop in the dining scene has rippled out into a full blown tsunami as London is now flooded with places to slurp your way to noodle glory. Whether it be juggernauts like Shoryu Ramen or independents like Muga and Nanban, between them you’re never too far away from getting your fix. But above all of them, one place for me reigns supreme. That place is Kanada-ya and there newly opened second site is where I find myself for dinner.

What is it about Kanada-ya that attracts me so much that I would throw whatever credibility I have behind it? Like all good ramen, it starts with the broth and here, it is proper – 18-hour pork bone broth. Thick, meaty and subtle gelatinous, the broth is an explosion of flavours and so rich, it almost makes you forget that there is anything else in the bowl.

It is a labour of love if nothing else and one can taste that no corners are cut or expense spared to create this beautiful base. The viscosity of the broth is important because it’s thickness is what allows it to cling onto the ramen which makes each mouthful one to savour.

With this in mind, my favoured bowl is the pork collar Charshumen which I believe truly allows the broth to shine however, the spicy ‘tan-tan’ Gekikara is also delightful. Sandwiched by starters of karaage chicken and dessert of their wonderful soft serve (matcha flavour and/or black sesame) and you’ve got yourself a meal that directly feeds the soul.
