What is BTW Craft Tonic?

There’s been a gin craze in the nation over the past couple of years, in case you hadn’t noticed. But what happened to Gin’s perfect match – tonic? 214 Bermondsey, set in an old antiques shop, is a gin bar that makes Bermondsey Tonic Water. It’s a syrup (the quinine comes from the bark of the cinchona tree), which is added to carbonated water. That means no mass chemical extractions of quinine alkaloids and a rather better G&T for you.

Born of a passion for quality spirits and traditional methods, BTW is the UK’s first small batch tonic water. BTW Tonic comes in ready to drink form & also as a syrup (a quinine flavoured cordial) to be lengthened with soda or used as a cocktail ingredient.

Where did it all start?

The inspiration came when Nick Crispini and Lawrence Mason were compiling the gin listing for local haunt 214 Bermondsey. They found that too many gins stood up well on their own but were stripped of their individuality when mixed with commercially available tonic waters. Many people love a good G&T but think the tonic can be overly sweet yet cloyingly bitter, masking the delicate flavours of the gin. BTW offers smoother and more subtle earthy flavours, allowing the gin to shine through.

Tasting notes

Tonic Water:

There’s a little sweetness, but only a little, and a little citrus. But it’s very easy going and I could happily drink it on it’s own. The citric acid is prominent and gives a zing of it’s own but the defining character of BTW is its rounded tone. Great for those who like a more mellow G&T.

Tonic Syrup:

Based on a Victorian recipe, BTW Syrup is the only tonic we know of that is made by soaking actual Cinchona Bark in pure water to naturally release the quinine (the ingredient that gives tonic water its distinctive flavour).  All that’s added to this hand-made preparation is sugar and citric acid.   This undiluted syrup is left part filtered which, when lengthened with soda, provides a beautiful sunset golden hue.

Serving Suggestions:

25ml Gin
25ml Aperol
25ml BTW Syrup
50ml Pink Grapefruit Juice
Add all ingredients into a Boston and shake hard, double strain into a coupette.
